From blau (“blue”) + Kohl (“cabbage”). The use of "blue" in the south and "red" in the north is sometimes explained by different traditional ways of preparation. Though this may have had an influence, the main reason is that German (like English) originally had no word for purple, which could thus be considered "reddish blue" just as well as "bluish red".
