From French stroganoff, ellipsis of bœuf Stroganoff (whence English beef stroganoff), from bœuf (“beef”) + Stroganoff (from Russian Стро́ганов (Stróganov)), named after one of the members of the Stroganov family, a distinguished Russian family involved in the settlement of Siberia. It has been debated whether it is named after the diplomat Pavel Alexandrovich Stroganov or the politician Alexander Stroganov.
