From older notare, from Vulgar Latin *notāre, from Latin natāre. Compare Corsican nutà, Romanian înota. The original Italian notare had no diphthong in the infinitive, but it did have conjugations such as nuota (“swims”), reflecting the regular diphthongization of Latin /ŏ/ in a stressed open syllable. Eventually the diphthong spread to all forms of the verb, including the infinitive. Doublet of natare.
