First attested in the probably the 1670s in a handwritten glossary from Råbyggelaget; independently recorded in Fyresdal in 1698. NAOB analyses the modern dialect word as a shortened form of kalvesuss (“jellied veal dish”), although the early independent attestations indicate that suss was already an established name for the dish. Possibly related to dialectal sossen (“quivering, rocking”), in reference to the dish's trembling, gelatinous consistency. Ultimately unknown.
